Description

These cookies combine the flavors of Baileys Irish Cream with a classic sandwich cookie.


Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • ¾ cup granulated sugar
  • ¾ cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup Baileys Irish Cream
  • 2 cups powdered sugar
  • ½ cup unsalted butter, softened


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Drop rounded tablespoons of dough onto baking sheets.
  7. Bake for 8-10 minutes, or until the edges are golden brown. Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
  8. For the filling, whisk together the Baileys Irish Cream, powdered sugar, and softened butter until smooth.
  9. Once the cookies are cooled, spread a generous amount of filling on the flat side of one cookie and top with another cookie to create a sandwich.

Notes

  • For a stronger Baileys flavor, add a teaspoon of Baileys extract to the filling.
