Description
These cookies combine the flavors of Baileys Irish Cream with a classic sandwich cookie.
Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- ¾ cup granulated sugar
- ¾ cup packed light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 ¾ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup Baileys Irish Cream
- 2 cups powdered sugar
- ½ cup unsalted butter, softened
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Drop rounded tablespoons of dough onto baking sheets.
- Bake for 8-10 minutes, or until the edges are golden brown. Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
- For the filling, whisk together the Baileys Irish Cream, powdered sugar, and softened butter until smooth.
- Once the cookies are cooled, spread a generous amount of filling on the flat side of one cookie and top with another cookie to create a sandwich.
Notes
- For a stronger Baileys flavor, add a teaspoon of Baileys extract to the filling.
