A hearty and flavorful dish featuring a whole pumpkin stuffed with a savory mixture, baked to perfection.
Ingredients
- 1 medium pumpkin (about 3-4 lbs)
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 lb ground beef or turkey
- 1 cup cooked rice
- 1/2 cup chopped spinach
- 1/2 cup shredded cheese
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
Instructions
- Preheat oven to 375°F (190°C).
- Cut the top off the pumpkin and scoop out the seeds and pulp.
- Heat olive oil in a pan and sauté onion and garlic until soft.
- Add ground meat and cook until browned. Drain excess fat.
- Stir in cooked rice, spinach, cheese, salt, pepper, and thyme.
- Fill the pumpkin with the stuffing mixture and replace the top.
- Bake for 60-70 minutes or until the pumpkin is tender.
- Let cool slightly before slicing and serving.
Notes
- Use a sharp knife for cutting the pumpkin.
- Adjust seasoning to taste.
- Substitute quinoa for rice if preferred.
