Description

A hearty and flavorful dish featuring a whole pumpkin stuffed with a savory mixture, baked to perfection.


Ingredients

  • 1 medium pumpkin (about 3-4 lbs)
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 lb ground beef or turkey
  • 1 cup cooked rice
  • 1/2 cup chopped spinach
  • 1/2 cup shredded cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut the top off the pumpkin and scoop out the seeds and pulp.
  3. Heat olive oil in a pan and sauté onion and garlic until soft.
  4. Add ground meat and cook until browned. Drain excess fat.
  5. Stir in cooked rice, spinach, cheese, salt, pepper, and thyme.
  6. Fill the pumpkin with the stuffing mixture and replace the top.
  7. Bake for 60-70 minutes or until the pumpkin is tender.
  8. Let cool slightly before slicing and serving.
