Description
This recipe shows you how to make delicious smothered chicken with rice.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (10.75 ounce) can condensed cream of mushroom soup
- 1 cup chicken broth
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
- 2 cups cooked rice
Instructions
- Season chicken breasts with salt and pepper.
- Heat olive oil in a skillet over medium-high heat.
- Cook chicken until browned on both sides. Remove from skillet.
- Add onion to the skillet and cook until softened. Add garlic and cook for 1 minute.
- Stir in cream of mushroom soup and chicken broth. Season with salt and pepper.
- Return chicken to the skillet.
- Reduce heat to low, cover, and simmer for 20 minutes, or until chicken is cooked through.
- Serve chicken over cooked rice.
Notes
- You can use any type of rice you like.
- Garnish with fresh parsley, if desired.
