Description

This recipe shows you how to make delicious smothered chicken with rice.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1 cup chicken broth
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2 cups cooked rice


Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Cook chicken until browned on both sides. Remove from skillet.
  4. Add onion to the skillet and cook until softened. Add garlic and cook for 1 minute.
  5. Stir in cream of mushroom soup and chicken broth. Season with salt and pepper.
  6. Return chicken to the skillet.
  7. Reduce heat to low, cover, and simmer for 20 minutes, or until chicken is cooked through.
  8. Serve chicken over cooked rice.

Notes

  • You can use any type of rice you like.
  • Garnish with fresh parsley, if desired.
