Description

A healthy twist on a classic BLT, served in a bowl with quinoa.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 8 slices bacon, cooked and crumbled
  • 2 cups cherry tomatoes, halved
  • 1 head of lettuce, chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons lemon juice
  • Salt and pepper to taste


Instructions

  1. Cook quinoa according to package directions.
  2. While quinoa cooks, cook bacon until crispy. Crumble and set aside.
  3. Halve the cherry tomatoes and chop the lettuce.
  4. In a small bowl, whisk together mayonnaise and lemon juice. Season with salt and pepper.
  5. Assemble bowls by layering quinoa, bacon, tomatoes, and lettuce.
  6. Drizzle with mayonnaise mixture and serve.

Notes

  • You can add avocado for extra creaminess.
