Description
A healthy twist on a classic BLT, served in a bowl with quinoa.
Ingredients
- 1 cup quinoa
- 2 cups water
- 8 slices bacon, cooked and crumbled
- 2 cups cherry tomatoes, halved
- 1 head of lettuce, chopped
- 1/2 cup mayonnaise
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Cook quinoa according to package directions.
- While quinoa cooks, cook bacon until crispy. Crumble and set aside.
- Halve the cherry tomatoes and chop the lettuce.
- In a small bowl, whisk together mayonnaise and lemon juice. Season with salt and pepper.
- Assemble bowls by layering quinoa, bacon, tomatoes, and lettuce.
- Drizzle with mayonnaise mixture and serve.
Notes
- You can add avocado for extra creaminess.
- Feel free to use your favorite type of lettuce.
