Ingredients
- 1/2 cup unsalted butter
- 1 cup fresh or frozen cranberries
- 3/4 cup granulated sugar
- 1 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/4 tsp salt
- 2 large eggs
- 1/2 cup milk
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C).
- Melt butter in a skillet over medium heat until it turns golden brown. Pour into a 9-inch round cake pan.
- Sprinkle cranberries evenly over the butter, then sprinkle 1/4 cup sugar over them.
- In a bowl, whisk flour, baking powder, and salt.
- In another bowl, beat eggs, milk, vanilla, and remaining sugar. Add dry ingredients and mix until just combined.
- Pour batter over cranberries. Bake for 30-35 minutes or until a toothpick comes out clean.
- Let cool for 10 minutes, then invert onto a plate.
