Description
A simple baked chicken dish with a fresh bruschetta topping.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 pint cherry tomatoes, halved
- 1/4 cup chopped fresh basil
- 2 cloves garlic, minced
- 2 tablespoons balsamic glaze
- 4 ounces fresh mozzarella, sliced
Instructions
- Preheat your oven to 400°F (200°C).
- Season chicken breasts with salt, pepper, and Italian seasoning.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken breasts for 2-3 minutes per side.
- In a bowl, combine cherry tomatoes, basil, minced garlic, and balsamic glaze.
- Top each chicken breast with the tomato mixture and mozzarella slices.
- Bake for 20-25 minutes, or until chicken is cooked through and cheese is melted.
Notes
- Serve immediately.
- You can add a drizzle of olive oil before serving.
