Description

A simple baked chicken dish with a fresh bruschetta topping.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 pint cherry tomatoes, halved
  • 1/4 cup chopped fresh basil
  • 2 cloves garlic, minced
  • 2 tablespoons balsamic glaze
  • 4 ounces fresh mozzarella, sliced


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season chicken breasts with salt, pepper, and Italian seasoning.
  3. Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken breasts for 2-3 minutes per side.
  4. In a bowl, combine cherry tomatoes, basil, minced garlic, and balsamic glaze.
  5. Top each chicken breast with the tomato mixture and mozzarella slices.
  6. Bake for 20-25 minutes, or until chicken is cooked through and cheese is melted.

Notes
