A delicious dessert combining the flavors of carrot cake and creamy cheesecake, topped with a smooth and rich frosting.
Ingredients
- 2 cups grated carrots
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 3 large eggs
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 16 oz cream cheese, softened
- 1/2 cup sour cream
- 1/4 cup powdered sugar
- 1 tsp lemon juice
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
- In a bowl, mix grated carrots, flour, sugars, oil, eggs, vanilla, baking powder, cinnamon, nutmeg, and salt.
- Pour the batter into the pan and bake for 30-35 minutes until a toothpick comes out clean. Let it cool.
- Beat cream cheese, sour cream, powdered sugar, and lemon juice until smooth.
- Spread the cream cheese mixture over the cooled carrot cake.
- Chill for at least 2 hours before serving.
Notes
- Use freshly grated carrots for the best texture.
- Let the cake cool completely before adding the topping.
- Store leftovers in the refrigerator for up to 3 days.
