Carrot Ginger Mint Soup

Description

A refreshing and flavorful soup with carrots, ginger, and mint.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 pound carrots, peeled and chopped
  • 4 cups vegetable broth
  • 1/4 cup fresh mint leaves
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a pot.
  2. Add onion and cook until softened.
  3. Add garlic and ginger, cook for 1 minute.
  4. Add carrots and broth. Bring to a boil, then simmer until carrots are tender.
  5. Stir in mint.
  6. Season with salt and pepper.
  7. Blend until smooth.
