Description
A refreshing and flavorful soup with carrots, ginger, and mint.
Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 pound carrots, peeled and chopped
- 4 cups vegetable broth
- 1/4 cup fresh mint leaves
- Salt and pepper to taste
Instructions
- Heat olive oil in a pot.
- Add onion and cook until softened.
- Add garlic and ginger, cook for 1 minute.
- Add carrots and broth. Bring to a boil, then simmer until carrots are tender.
- Stir in mint.
- Season with salt and pepper.
- Blend until smooth.
