Cheesy Colcannon Dip

Description

A creamy, cheesy dip with potatoes and cabbage.


Ingredients

  • 1 pound Yukon Gold potatoes, peeled and quartered
  • 1/2 head green cabbage, cored and chopped
  • 1/2 cup milk
  • 1/4 cup butter
  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped green onions
  • Salt and pepper to taste


Instructions

  1. Boil potatoes until tender. Drain and mash.
  2. Steam or boil cabbage until softened. Chop finely.
  3. In a pot, combine mashed potatoes, cabbage, milk, and butter. Heat gently.
  4. Stir in cream cheese and cheddar cheese until melted and smooth.
  5. Add green onions, salt, and pepper.
  6. Serve warm with your favorite dippers.

Notes

  • Serve with crusty bread, crackers, or vegetables.
  • For a spicier dip, add a pinch of red pepper flakes.
