Description
A healthy and delicious alternative to traditional spaghetti, using zucchini noodles.
Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 (14.5 oz) cans diced tomatoes, undrained
- 1 tsp dried oregano
- 1/2 tsp dried basil
- Salt and pepper to taste
- 4 medium zucchini, spiralized into noodles (zoodles)
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Cut chicken breasts into bite-sized pieces. Season with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Cook chicken until browned, about 5-7 minutes. Remove from skillet and set aside.
- Add onion to the skillet and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
- Stir in diced tomatoes, oregano, and basil. Season with salt and pepper. Bring to a simmer.
- Return chicken to the skillet. Reduce heat and simmer for 10 minutes, or until chicken is cooked through and sauce has thickened slightly.
- Add zoodles to the skillet and cook for 2-3 minutes, or until tender-crisp.
- Serve immediately, topped with Parmesan cheese, if desired.
Notes
- You can add other vegetables like bell peppers or mushrooms to the sauce.
- For a spicier dish, add a pinch of red pepper flakes.
- If you don’t have a spiralizer, you can use a vegetable peeler to create zoodles.
