Chicken & Zoodle Spaghetti

Description

A healthy and delicious alternative to traditional spaghetti, using zucchini noodles.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 (14.5 oz) cans diced tomatoes, undrained
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • Salt and pepper to taste
  • 4 medium zucchini, spiralized into noodles (zoodles)
  • 1/4 cup grated Parmesan cheese (optional)


Instructions

  1. Cut chicken breasts into bite-sized pieces. Season with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Cook chicken until browned, about 5-7 minutes. Remove from skillet and set aside.
  3. Add onion to the skillet and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  4. Stir in diced tomatoes, oregano, and basil. Season with salt and pepper. Bring to a simmer.
  5. Return chicken to the skillet. Reduce heat and simmer for 10 minutes, or until chicken is cooked through and sauce has thickened slightly.
  6. Add zoodles to the skillet and cook for 2-3 minutes, or until tender-crisp.
  7. Serve immediately, topped with Parmesan cheese, if desired.

Notes

  • You can add other vegetables like bell peppers or mushrooms to the sauce.
  • For a spicier dish, add a pinch of red pepper flakes.
  • If you don’t have a spiralizer, you can use a vegetable peeler to create zoodles.
