Description
A simple stew with chickpeas and spinach.
Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1/2 tsp turmeric
- 1/4 tsp red pepper flakes (optional)
- 1 (15-ounce) can chickpeas, rinsed and drained
- 5 ounces fresh spinach
- 3 cups vegetable broth
- Salt and pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and cook until softened, about 5 minutes.
- Add garlic, cumin, turmeric, and red pepper flakes (if using). Cook for 1 minute.
- Stir in chickpeas, spinach, and vegetable broth.
- Season with salt and pepper.
- Bring to a boil, then reduce heat and simmer for 15 minutes, or until spinach is wilted and flavors have melded.
Notes
- Serve hot.
- Add a squeeze of lemon juice before serving.
