Chickpea & Spinach Stew

Description

A simple stew with chickpeas and spinach.


Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1/2 tsp turmeric
  • 1/4 tsp red pepper flakes (optional)
  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 5 ounces fresh spinach
  • 3 cups vegetable broth
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and cook until softened, about 5 minutes.
  3. Add garlic, cumin, turmeric, and red pepper flakes (if using). Cook for 1 minute.
  4. Stir in chickpeas, spinach, and vegetable broth.
  5. Season with salt and pepper.
  6. Bring to a boil, then reduce heat and simmer for 15 minutes, or until spinach is wilted and flavors have melded.

Notes

  • Serve hot.
  • Add a squeeze of lemon juice before serving.
