These cupcakes combine the flavors of chocolate and Guinness for a rich treat.

Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/2 cup buttermilk
  • 1/2 cup Guinness stout
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. In a separate bowl, whisk together the egg, buttermilk, Guinness, oil, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Fold in the chocolate chips.
  6. Fill the cupcake liners about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cupcakes cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • You can adjust the amount of Guinness to your preference.
  • For a richer flavor, use a high-quality cocoa powder.
