Description

Simple recipe for delicious chocolate lava cakes.


Ingredients

  • 6 ounces semi-sweet chocolate, chopped
  • 1/2 cup (1 stick) unsalted butter
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • Pinch of salt
  • Powdered sugar, for dusting (optional)
  • Fresh berries, for serving (optional)


Instructions

  1. Preheat your oven to 425°F (220°C). Grease and flour two ramekins.
  2. In a heatproof bowl set over a pan of simmering water, melt the chocolate and butter, stirring until smooth. Remove from heat.
  3. In a separate bowl, whisk together the eggs, egg yolks, and sugar until pale and slightly thickened.
  4. Whisk the melted chocolate mixture into the egg mixture until combined.
  5. Gently fold in the flour and salt until just combined. Do not overmix.
  6. Pour the batter into the prepared ramekins.
  7. Bake for 12-15 minutes, or until the edges are set and the center is still soft.
  8. Let cool for a minute or two before inverting onto plates.
  9. Dust with powdered sugar and serve immediately with fresh berries, if desired.

Notes

  • You can make these ahead of time and bake them just before serving.
  • For best results, use good quality chocolate.
