Description

A moist and rich chocolate cake made with mayonnaise.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 1 3/4 cups granulated sugar
  • 2 large eggs
  • 1 cup mayonnaise
  • 1 cup milk
  • 2 teaspoons vanilla extract
  • 1 cup boiling water


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate bowl, beat together the sugar, eggs, mayonnaise, milk, and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Stir in the boiling water. The batter will be thin.
  6. Pour the batter into the prepared pan.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool in the pan before frosting.

Notes

  • You can substitute buttermilk for the milk for extra tang.
  • For a richer flavor, use dark cocoa powder.
