Description
A hearty beef stew, perfect for cold weather.
Ingredients
- 1.5 lbs beef stew meat
- 2 tbsp olive oil
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 6 cups beef broth
- 1 lb potatoes, peeled and cubed
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 2 tbsp cornstarch (optional)
- 1/4 cup cold water (optional)
Instructions
- Season beef with salt and pepper.
- Heat olive oil in a large pot or Dutch oven. Brown beef in batches. Remove beef and set aside.
- Add onion, carrots, and celery to the pot. Cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute.
- Return beef to the pot. Pour in beef broth. Add thyme and rosemary.
- Bring to a boil, then reduce heat and simmer for 1.5 hours.
- Add potatoes and cook until tender, about 30 minutes.
- If desired, mix cornstarch with cold water. Stir into stew and cook until thickened.
- Season with salt and pepper to taste.
Notes
- Serve hot with crusty bread.
- You can add other vegetables like parsnips or mushrooms.
