Classic Beef Stew

Description

A hearty beef stew, perfect for cold weather.


Ingredients

  • 1.5 lbs beef stew meat
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 6 cups beef broth
  • 1 lb potatoes, peeled and cubed
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 2 tbsp cornstarch (optional)
  • 1/4 cup cold water (optional)


Instructions

  1. Season beef with salt and pepper.
  2. Heat olive oil in a large pot or Dutch oven. Brown beef in batches. Remove beef and set aside.
  3. Add onion, carrots, and celery to the pot. Cook until softened, about 5 minutes.
  4. Add garlic and cook for 1 minute.
  5. Return beef to the pot. Pour in beef broth. Add thyme and rosemary.
  6. Bring to a boil, then reduce heat and simmer for 1.5 hours.
  7. Add potatoes and cook until tender, about 30 minutes.
  8. If desired, mix cornstarch with cold water. Stir into stew and cook until thickened.
  9. Season with salt and pepper to taste.

Notes

  • Serve hot with crusty bread.
  • You can add other vegetables like parsnips or mushrooms.
