Description

A traditional French dish of chicken braised with wine, mushrooms, onions, and bacon.


Ingredients

  • 1 (3-4 pound) chicken, cut into pieces
  • 1/4 cup all-purpose flour
  • Salt and freshly ground black pepper to taste
  • 4 tablespoons olive oil
  • 8 ounces bacon, cut into 1/2-inch pieces
  • 1 large onion, chopped
  • 2 carrots, peeled and chopped
  • 2 cloves garlic, minced
  • 1 bottle (750 ml) dry red wine
  • 2 cups chicken broth
  • 1 pound cremini mushrooms, quartered
  • 2 tablespoons chopped fresh parsley, for garnish


Instructions

  1. Season chicken pieces with salt and pepper, then dredge in flour.
  2. Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown chicken in batches, then set aside.
  3. Add bacon to the pot and cook until crispy. Remove bacon and set aside.
  4. Add onion and carrots to the pot and cook until softened. Stir in garlic.
  5. Pour in red wine and chicken broth. Bring to a simmer.
  6. Return chicken and bacon to the pot. Cover and simmer for 45 minutes to 1 hour, or until chicken is cooked through.
  7. Add mushrooms during the last 20 minutes of cooking.
  8. Garnish with parsley before serving.

Notes

  • Serve with mashed potatoes or crusty bread.
  • For a richer flavor, use a high-quality red wine.
