Description
A refreshing and simple soup with coconut, strawberries, and lime.
Ingredients
- 1 can (13.5 oz) coconut milk
- 1 pound fresh strawberries, hulled
- 1/4 cup lime juice
- 2 tablespoons honey or maple syrup (optional)
- Lime slices for garnish
Instructions
- Combine coconut milk, strawberries, and lime juice in a blender.
- Blend until smooth.
- Add honey or maple syrup if desired, and blend again.
- Chill for at least 30 minutes.
- Serve cold, garnished with lime slices.
Notes
- For a thicker soup, freeze some strawberries before blending.
