Description
A classic dish of tender corned beef and flavorful cabbage.
Ingredients
- 3-4 pounds corned beef brisket
- 1 tablespoon pickling spice
- 1 large onion, quartered
- 3 cloves garlic, minced
- 8 cups water
- 1 head of cabbage, cut into wedges
- 4 carrots, peeled and cut into 1-inch pieces
- 4 medium potatoes, peeled and quartered
Instructions
- Place the corned beef, pickling spice, onion, garlic, and water in a large pot.
- Bring to a boil, then reduce heat and simmer for 3-4 hours, or until the beef is tender.
- Add the cabbage, carrots, and potatoes to the pot.
- Cook for another 30-40 minutes, or until the vegetables are tender.
- Remove the corned beef and vegetables from the pot.
- Slice the corned beef and serve with the vegetables.
Notes
- You can add other vegetables, such as parsnips or turnips.
- Leftovers are great for sandwiches.
