Description
Spicy and tangy shrimp tacos with a cranberry chipotle twist.
Ingredients
- 1 lb shrimp, peeled and deveined
- 1/2 cup cranberry sauce
- 2 chipotle peppers in adobo sauce, minced
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp cumin
- 1/2 tsp salt
- 8 small corn tortillas
- 1 cup shredded cabbage
- 1/4 cup chopped cilantro
- 1 lime, cut into wedges
Instructions
- In a bowl, mix cranberry sauce, chipotle peppers, garlic powder, cumin, and salt.
- Toss shrimp in the mixture until coated.
- Heat olive oil in a pan over medium heat.
- Add shrimp and cook for 2-3 minutes per side until pink.
- Warm tortillas in a dry pan or microwave.
- Fill tortillas with shrimp, shredded cabbage, and cilantro.
- Serve with lime wedges.
Notes
- Adjust chipotle peppers for less heat.
- Use flour tortillas if preferred.
- Add avocado slices for extra creaminess.
