Ingredients
- 4 boneless, skinless chicken breasts
- 1/2 cup goat cheese
- 1/4 cup dried cranberries
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp dried thyme
Instructions
- Preheat oven to 375°F.
- Cut a pocket into each chicken breast.
- Mix goat cheese and cranberries in a bowl.
- Stuff each chicken breast with the mixture.
- Season the outside with salt, pepper, garlic powder, and thyme.
- Heat olive oil in an oven-safe pan over medium heat.
- Sear chicken for 2-3 minutes per side.
- Transfer pan to the oven and bake for 20 minutes.
- Let rest for 5 minutes before serving.
Notes
- Use a sharp knife to cut pockets in the chicken.
- Press edges of stuffed chicken to seal.
