Ingredients

- 3/4 cup granulated sugar
- 3 large eggs

- 1 cup fresh cranberries
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch cake pan.
- In a bowl, whisk together flour, baking powder, and salt.
- In another bowl, mix ricotta, sugar, eggs, olive oil, and vanilla until smooth.
- Combine the wet and dry ingredients, stirring until just blended.
- Fold in the cranberries gently.
- Pour the batter into the prepared pan and bake for 40-45 minutes.
- Let the cake cool in the pan for 10 minutes before transferring to a wire rack.
