Ingredients
- 1 cup rolled oats
- 1/2 cup whole wheat flour
- 1/2 cup dried cranberries
- 1/2 cup chopped walnuts
- 1/4 cup honey
- 1/4 cup coconut oil, melted
- 1 egg
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/4 tsp salt
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, mix oats, flour, baking powder, and salt.
- Add cranberries and walnuts, stirring to combine.
- In another bowl, whisk honey, coconut oil, egg, and vanilla.
- Pour the wet ingredients into the dry ingredients and mix well.
- Drop spoonfuls of dough onto the baking sheet, flattening slightly.
- Bake for 12-15 minutes until golden brown.
- Let cool before serving.
Notes
- Store in an airtight container for up to one week.
- Substitute honey with maple syrup if preferred.
- For extra crunch, toast the walnuts before adding.
