Ingredients

  • 1 cup rolled oats
  • 1/2 cup whole wheat flour
  • 1/2 cup dried cranberries
  • 1/2 cup chopped walnuts
  • 1/4 cup honey
  • 1/4 cup coconut oil, melted
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt


Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mix oats, flour, baking powder, and salt.
  3. Add cranberries and walnuts, stirring to combine.
  4. In another bowl, whisk honey, coconut oil, egg, and vanilla.
  5. Pour the wet ingredients into the dry ingredients and mix well.
  6. Drop spoonfuls of dough onto the baking sheet, flattening slightly.
  7. Bake for 12-15 minutes until golden brown.
