Description

A refreshing and nutritious salad with quinoa, cranberries, walnuts, and feta cheese. Perfect for a light lunch or side dish.


Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1/2 cup dried cranberries
  • 1/2 cup chopped walnuts
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Rinse the quinoa under cold water.
  2. Bring water to a boil in a saucepan, add quinoa, and reduce heat to low. Cover and simmer for 15 minutes.
  3. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork.
  4. In a large bowl, combine cooked quinoa, cranberries, walnuts, and feta.
  5. Whisk together olive oil, lemon juice, salt, and pepper. Pour over the salad and toss gently.
  6. Serve chilled or at room temperature.

Notes

  • For extra flavor, toast the walnuts before adding them.
  • You can substitute feta with goat cheese if preferred.
