Cream Cheese Pasta with Corn and Spinach

Description

A simple pasta dish with cream cheese, corn, and spinach.


Ingredients

  • 1 pound pasta
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 10 ounces frozen spinach, thawed and squeezed dry
  • 1 cup corn (fresh or frozen)
  • 8 ounces cream cheese
  • 1/2 cup pasta water
  • Salt and pepper to taste


Instructions

  1. Cook pasta according to package directions.
  2. Heat olive oil in a pan. Add onion and cook until softened.
  3. Add garlic and cook for 1 minute.
  4. Stir in spinach and corn. Cook until heated through.
  5. Add cream cheese and pasta water. Stir until the cream cheese melts and the sauce is smooth.
  6. Season with salt and pepper.
  7. Add cooked pasta to the sauce and toss to combine.

Notes

  • You can add cooked chicken or shrimp for extra protein.
  • Garnish with Parmesan cheese if desired.
