Description
A simple pasta dish with cream cheese, corn, and spinach.
Ingredients
- 1 pound pasta
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 10 ounces frozen spinach, thawed and squeezed dry
- 1 cup corn (fresh or frozen)
- 8 ounces cream cheese
- 1/2 cup pasta water
- Salt and pepper to taste
Instructions
- Cook pasta according to package directions.
- Heat olive oil in a pan. Add onion and cook until softened.
- Add garlic and cook for 1 minute.
- Stir in spinach and corn. Cook until heated through.
- Add cream cheese and pasta water. Stir until the cream cheese melts and the sauce is smooth.
- Season with salt and pepper.
- Add cooked pasta to the sauce and toss to combine.
Notes
- You can add cooked chicken or shrimp for extra protein.
- Garnish with Parmesan cheese if desired.
