Description
A comforting pie filled with creamy leeks and potatoes.
Ingredients
- 2 tablespoons olive oil
- 2 large leeks, sliced and washed
- 4 cloves garlic, minced
- 1 kg potatoes, peeled and diced
- 500 ml vegetable broth
- 200 ml heavy cream
- Salt and pepper to taste
- 1 sheet of ready-made puff pastry
- 1 egg, beaten (for egg wash)
Instructions
- Heat olive oil in a pan. Add leeks and garlic; cook until softened.
- Add potatoes and vegetable broth. Simmer until potatoes are tender.
- Stir in heavy cream, salt, and pepper.
- Pour the mixture into a pie dish.
- Top with puff pastry and brush with egg wash.
- Bake at 200°C (400°F) until golden brown.

- Serve hot.
