Creamy Leek and Potato Pie

Description

A comforting pie filled with creamy leeks and potatoes.


Ingredients

  • 2 tablespoons olive oil
  • 2 large leeks, sliced and washed
  • 4 cloves garlic, minced
  • 1 kg potatoes, peeled and diced
  • 500 ml vegetable broth
  • 200 ml heavy cream
  • Salt and pepper to taste
  • 1 sheet of ready-made puff pastry
  • 1 egg, beaten (for egg wash)


Instructions

  1. Heat olive oil in a pan. Add leeks and garlic; cook until softened.
  2. Add potatoes and vegetable broth. Simmer until potatoes are tender.
  3. Stir in heavy cream, salt, and pepper.
  4. Pour the mixture into a pie dish.
  5. Top with puff pastry and brush with egg wash.
  6. Bake at 200°C (400°F) until golden brown.
