Description
A simple recipe for creamy mentaiko udon.
Ingredients
- 200g udon noodles
- 2 tablespoons mentaiko (spicy cod roe)
- 1 tablespoon unsalted butter
- 1/4 cup heavy cream
- 1 tablespoon soy sauce
- Nori seaweed, shredded (for garnish)
- Scallions, chopped (for garnish)
Instructions
- Cook udon noodles according to package directions. Drain and set aside.
- In a pan, melt butter over medium heat.
- Add mentaiko and cook for 1 minute, breaking it up with a spoon.
- Pour in heavy cream and soy sauce. Simmer for 1 minute, stirring constantly.
- Add cooked udon noodles to the sauce and toss to coat.
- Serve immediately, garnished with shredded nori and chopped scallions.
Notes
- Adjust the amount of mentaiko to your taste.
- If you don’t have mentaiko, you can substitute with tarako (cod roe).
