Description
A comforting soup perfect for chilly weather.
Ingredients
- 2 tablespoons olive oil
- 2 large leeks, white and light green parts only, thinly sliced and washed
- 4 cloves garlic, minced
- 4 cups Yukon Gold potatoes, peeled and cubed
- 4 cups vegetable broth
- 1 cup water
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup heavy cream
- Fresh chives, chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add leeks and cook until softened, about 5-7 minutes.
- Stir in garlic and cook for 1 minute.
- Add potatoes, vegetable broth, water, salt, and pepper.
- Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
- Carefully transfer soup to a blender and blend until smooth.
- Return soup to the pot. Stir in heavy cream and heat through. Do not boil.
- Serve hot, garnished with fresh chives.
Notes
- For a vegan version, substitute heavy cream with full-fat coconut milk.
- You can add a bay leaf while simmering for extra flavor. Remove before blending.
