Creamy Tomato Soup with Grilled Cheese Hearts

Description

A comforting soup with grilled cheese hearts.


Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 (28 ounce) cans crushed tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/2 cup heavy cream
  • 8 slices bread
  • 4 slices cheddar cheese
  • Butter for grilling


Instructions

  1. Heat olive oil in a pot. Add onion and cook until softened. Add garlic and cook for 1 minute.
  2. Stir in crushed tomatoes, vegetable broth, basil, and oregano. Season with salt and pepper. Bring to a simmer and cook for 20 minutes.
  3. Stir in heavy cream.
  4. Cut heart shapes from bread slices.
  5. Butter one side of each bread slice. Place cheese between two bread hearts.
  6. Grill the sandwiches until golden brown and cheese is melted.
  7. Serve soup with grilled cheese hearts.

Notes

  • You can use any type of cheese for the grilled cheese.
  • Add a pinch of red pepper flakes for some heat.
