Description
A comforting soup with grilled cheese hearts.
Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 (28 ounce) cans crushed tomatoes
- 4 cups vegetable broth
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- 1/2 cup heavy cream
- 8 slices bread
- 4 slices cheddar cheese
- Butter for grilling
Instructions
- Heat olive oil in a pot. Add onion and cook until softened. Add garlic and cook for 1 minute.
- Stir in crushed tomatoes, vegetable broth, basil, and oregano. Season with salt and pepper. Bring to a simmer and cook for 20 minutes.
- Stir in heavy cream.
- Cut heart shapes from bread slices.
- Butter one side of each bread slice. Place cheese between two bread hearts.
- Grill the sandwiches until golden brown and cheese is melted.
- Serve soup with grilled cheese hearts.
Notes
- You can use any type of cheese for the grilled cheese.
- Add a pinch of red pepper flakes for some heat.
