Creamy Tuscan Chicken

Description

A simple recipe for creamy Tuscan chicken.


Ingredients

  • 1.5 lbs chicken breasts
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup sun-dried tomatoes, oil-packed, drained
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste


Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Cook chicken until browned, about 5-7 minutes per side. Remove and set aside.
  4. Add onion to the skillet and cook until softened, about 5 minutes.
  5. Add garlic and sun-dried tomatoes, cook for 1 minute.
  6. Pour in heavy cream and chicken broth. Bring to a simmer.
  7. Stir in Parmesan cheese until melted.
  8. Return chicken to the skillet. Simmer until chicken is cooked through, about 5-7 minutes.
  9. Stir in fresh basil.
  10. Serve immediately.

Notes

  • Serve with pasta or rice.
  • Garnish with extra Parmesan cheese.
