Description
A simple recipe for creamy Tuscan chicken.
Ingredients
- 1.5 lbs chicken breasts
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup sun-dried tomatoes, oil-packed, drained
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
Instructions
- Season chicken breasts with salt and pepper.
- Heat olive oil in a skillet over medium-high heat.
- Cook chicken until browned, about 5-7 minutes per side. Remove and set aside.
- Add onion to the skillet and cook until softened, about 5 minutes.
- Add garlic and sun-dried tomatoes, cook for 1 minute.
- Pour in heavy cream and chicken broth. Bring to a simmer.
- Stir in Parmesan cheese until melted.
- Return chicken to the skillet. Simmer until chicken is cooked through, about 5-7 minutes.
- Stir in fresh basil.
- Serve immediately.
Notes
- Serve with pasta or rice.
- Garnish with extra Parmesan cheese.
