Description
A comforting risotto with winter mushrooms.
Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 8 oz mixed winter mushrooms, sliced
- 1 cup Arborio rice
- 1/2 cup dry white wine
- 4 cups hot vegetable broth
- 1/2 cup grated Parmesan cheese
- 2 tbsp butter
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pan. Add onion and cook until softened.
- Add garlic and mushrooms; cook until mushrooms are browned.
- Stir in rice and cook for 1 minute.
- Pour in white wine and cook until absorbed.
- Add 1 cup of broth and cook, stirring, until absorbed.
- Continue adding broth, 1 cup at a time, stirring until absorbed before adding more.
- Stir in Parmesan cheese and butter. Season with salt and pepper.
- Garnish with parsley.
Notes
- Use a good quality vegetable broth for best flavor.
- Stir frequently to prevent sticking.
