Creamy Winter Mushroom Risotto

Description

A comforting risotto with winter mushrooms.


Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 8 oz mixed winter mushrooms, sliced
  • 1 cup Arborio rice
  • 1/2 cup dry white wine
  • 4 cups hot vegetable broth
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp butter
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Heat olive oil in a large pan. Add onion and cook until softened.
  2. Add garlic and mushrooms; cook until mushrooms are browned.
  3. Stir in rice and cook for 1 minute.
  4. Pour in white wine and cook until absorbed.
  5. Add 1 cup of broth and cook, stirring, until absorbed.
  6. Continue adding broth, 1 cup at a time, stirring until absorbed before adding more.
  7. Stir in Parmesan cheese and butter. Season with salt and pepper.
  8. Garnish with parsley.

Notes

  • Use a good quality vegetable broth for best flavor.
  • Stir frequently to prevent sticking.
