Simple recipe for achieving perfectly crispy roast potatoes.
Ingredients
- 2 lbs potatoes, peeled and cut into 1.5-inch chunks
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- Place the potato chunks in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil and cook for 10 minutes.
- Drain the potatoes thoroughly.
- Toss the drained potatoes with olive oil, salt, and pepper in a bowl.
- Spread the potatoes in a single layer on a baking sheet.
- Roast for 35-45 minutes, flipping halfway through, until golden brown and crispy.
Notes
- For extra crispiness, you can rough up the edges of the potatoes after boiling by shaking them gently in the colander.
- You can add herbs like rosemary or thyme during the last 10 minutes of roasting.
