A rich and flavorful chili perfect for a cozy night in.
Ingredients
- 1 tablespoon olive oil
- 1/2 pound ground beef
- 1/2 onion, chopped
- 1 clove garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 cup beef broth
- 1/4 cup unsweetened cocoa powder
- 1 tablespoon brown sugar
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, chopped cilantro
Instructions
- Heat olive oil in a pot over medium heat. Add ground beef and cook until browned, breaking it up with a spoon.
- Add onion and cook until softened, about 5 minutes. Stir in garlic, chili powder, cumin, smoked paprika, and cayenne pepper (if using). Cook for 1 minute more.
- Stir in diced tomatoes, beef broth, cocoa powder, and brown sugar. Season with salt and pepper.
- Bring to a simmer, then reduce heat and cover. Cook for at least 30 minutes, or up to an hour, stirring occasionally.
- Serve hot with your favorite toppings.
Notes
- For a vegetarian version, substitute the ground beef with a can of drained and rinsed black beans or kidney beans.
- Adjust the amount of cayenne pepper to control the heat level.
