Ingredients
- 1 medium pumpkin
- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup cooked rice
- 1 cup diced tomatoes
- 1 cup chopped bell peppers
- 1 tablespoon soy sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the top off the pumpkin and remove the seeds and pulp.
- In a skillet, brown the ground beef with onion and garlic. Drain excess fat.
- Stir in cooked rice, diced tomatoes, bell peppers, soy sauce, salt, and pepper.
- Spoon the mixture into the pumpkin and replace the top.
- Place the pumpkin on a baking sheet and bake for 1 to 1.5 hours, or until the pumpkin is tender.
- Serve directly from the pumpkin, scooping out some of the flesh with each serving.
