Description

A simple and flavorful vegetarian meatball recipe using black beans.


Ingredients

  • 1 (15 ounce) can black beans, rinsed and drained
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper
  • 1 clove garlic, minced
  • 1 egg
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, mash the black beans with a fork until mostly mashed but still slightly chunky.
  3. Add the breadcrumbs, chopped onion, chopped bell pepper, minced garlic, egg, chili powder, cumin, salt, and pepper to the bowl.
  4. Mix all ingredients together until well combined.
  5. Form the mixture into small balls, about 1 inch in diameter.
  6. Heat the olive oil in a large skillet over medium heat.
  7. Carefully place the meatballs in the skillet and cook for 2-3 minutes per side, until lightly browned.
  8. Transfer the browned meatballs to a baking sheet.
  9. Bake for 15-20 minutes, or until firm and heated through.

Notes

  • Serve with your favorite sauce, such as marinara or a creamy avocado sauce.
  • These meatballs can be made ahead of time and reheated.
  • For a gluten-free option, use gluten-free breadcrumbs.
