Garlic Butter Chicken & Potatoes (One-Pan)

Description

Simple one-pan meal with chicken, potatoes, and garlic butter.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 1.5 lbs baby potatoes, halved
  • 4 tbsp olive oil
  • 1 tbsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1/2 cup (1 stick) unsalted butter, melted
  • 4 cloves garlic, minced
  • 2 tbsp chopped fresh parsley


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, toss potatoes with 2 tbsp olive oil, garlic powder, oregano, thyme, salt, and pepper.
  3. Place potatoes on a baking sheet.
  4. In the same bowl, toss chicken with remaining olive oil, salt, and pepper.
  5. Place chicken on the baking sheet with potatoes.
  6. Bake for 20 minutes.
  7. In a small bowl, mix melted butter and minced garlic.
  8. Remove the pan from the oven and brush the garlic butter over the chicken and potatoes.
  9. Return to oven and bake for another 15-20 minutes, or until chicken is cooked through and potatoes are tender.
  10. Garnish with fresh parsley.

Notes

  • Ensure chicken is cooked to an internal temperature of 165°F (74°C).
