Description
Simple one-pan meal with chicken, potatoes, and garlic butter.
Ingredients
- 1.5 lbs boneless, skinless chicken thighs
- 1.5 lbs baby potatoes, halved
- 4 tbsp olive oil
- 1 tbsp garlic powder
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt and pepper to taste
- 1/2 cup (1 stick) unsalted butter, melted
- 4 cloves garlic, minced
- 2 tbsp chopped fresh parsley
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, toss potatoes with 2 tbsp olive oil, garlic powder, oregano, thyme, salt, and pepper.
- Place potatoes on a baking sheet.
- In the same bowl, toss chicken with remaining olive oil, salt, and pepper.
- Place chicken on the baking sheet with potatoes.
- Bake for 20 minutes.
- In a small bowl, mix melted butter and minced garlic.
- Remove the pan from the oven and brush the garlic butter over the chicken and potatoes.
- Return to oven and bake for another 15-20 minutes, or until chicken is cooked through and potatoes are tender.
- Garnish with fresh parsley.
Notes
- Ensure chicken is cooked to an internal temperature of 165°F (74°C).
