Description

A festive holiday cake combining gingerbread spices with tart cranberries for a perfect seasonal treat.


Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground ginger
  • 1 tsp cinnamon
  • 1/2 tsp cloves
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1 large egg
  • 1/2 cup molasses
  • 1 cup fresh cranberries
  • 1/2 cup hot water


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch cake pan.
  2. Mix flour, baking soda, ginger, cinnamon, cloves, and salt in a bowl.
  3. Cream butter and brown sugar until light. Beat in egg and molasses.
  4. Alternate adding dry ingredients and hot water to the butter mixture.
  5. Fold in cranberries gently.
  6. Pour batter into prepared pan. Bake for 35-40 minutes.
  7. Cool before serving.
