Description

Easy-to-make bars with a gooey pecan filling on a shortbread crust.


Ingredients

  • 1 cup butter, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup packed brown sugar
  • 1 cup light corn syrup
  • 4 large eggs
  • 1 teaspoon salt
  • 2 cups chopped pecans


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the vanilla extract.
  3. Gradually add the flour, mixing until just combined. Press this mixture evenly into the bottom of the prepared baking pan to form the crust.
  4. In a separate bowl, whisk together the brown sugar, corn syrup, eggs, and salt until well combined.
  5. Stir in the chopped pecans.
  6. Pour the pecan mixture evenly over the crust.
  7. Bake for 35-40 minutes, or until the filling is set and the edges are golden brown.
  8. Let the bars cool completely in the pan before cutting into squares.

Notes

  • For a richer flavor, you can add a pinch of cinnamon to the pecan filling.
