Description

A simple and flavorful soup made with green split peas and fresh mint.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 8 cups vegetable broth
  • 1 pound green split peas, rinsed
  • Salt and pepper to taste
  • 1/4 cup chopped fresh mint, plus more for garnish


Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
  2. Add garlic and thyme and cook for 1 minute more.
  3. Pour in vegetable broth and add split peas. Bring to a boil, then reduce heat and simmer for 45-60 minutes, or until split peas are tender.
  4. Season with salt and pepper. Stir in mint.
  5. Garnish with fresh mint before serving.

Notes

  • For a creamier soup, blend a portion of the soup with an immersion blender.
