Description

A festive green velvet cake perfect for St. Patrick’s Day.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups granulated sugar
  • 1 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 ounce green gel food coloring
  • 1 teaspoon white vinegar
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • Shamrock sprinkles for decoration


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In a separate bowl, cream together sugar and oil. Add eggs one at a time, then stir in vanilla.
  4. In a small bowl, combine buttermilk, food coloring, and vinegar.
  5. Gradually add dry ingredients to wet ingredients, alternating with buttermilk mixture, beginning and ending with dry ingredients.
  6. Pour batter into prepared pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cakes cool in pans for 10 minutes before inverting onto a wire rack to cool completely.
  8. For the frosting, beat butter until smooth. Gradually add powdered sugar, alternating with milk. Stir in vanilla. Beat until light and fluffy.
  9. Frost the cake and decorate with shamrock sprinkles.

Notes

  • For best results, use gel food coloring.
  • Make sure your butter is softened but not melted for the frosting.
