Description
A festive green velvet cake perfect for St. Patrick’s Day.
Ingredients
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups granulated sugar
- 1 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 1 ounce green gel food coloring
- 1 teaspoon white vinegar
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- 1/2 cup milk
- 1 teaspoon vanilla extract
- Shamrock sprinkles for decoration
Instructions
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a bowl, whisk together flour, baking soda, and salt.
- In a separate bowl, cream together sugar and oil. Add eggs one at a time, then stir in vanilla.
- In a small bowl, combine buttermilk, food coloring, and vinegar.
- Gradually add dry ingredients to wet ingredients, alternating with buttermilk mixture, beginning and ending with dry ingredients.
- Pour batter into prepared pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let cakes cool in pans for 10 minutes before inverting onto a wire rack to cool completely.
- For the frosting, beat butter until smooth. Gradually add powdered sugar, alternating with milk. Stir in vanilla. Beat until light and fluffy.
- Frost the cake and decorate with shamrock sprinkles.
Notes
- For best results, use gel food coloring.
- Make sure your butter is softened but not melted for the frosting.
