A simple, healthy dinner perfect for busy weeknights. This recipe features flavorful chicken and roasted asparagus.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 bunch asparagus, trimmed
  • 2 lemons, zested and juiced
  • 2 tablespoons olive oil
  • 1 tablespoon dried herbs (Italian blend or your favorite)
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place asparagus on a baking sheet. Drizzle with 1 tablespoon olive oil, salt, and pepper. Toss to coat.
  3. In a bowl, mix lemon zest, lemon juice, remaining olive oil, dried herbs, salt, and pepper.
  4. Place chicken breasts in a baking dish. Pour lemon herb mixture over chicken.
  5. Roast asparagus for 12 minutes. Add the chicken to the oven and cook for 20-25 minutes, or until chicken is cooked through and asparagus is tender.
  6. Serve immediately.
