A simple, healthy dinner perfect for busy weeknights. This recipe features flavorful chicken and roasted asparagus.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 1 bunch asparagus, trimmed
- 2 lemons, zested and juiced
- 2 tablespoons olive oil
- 1 tablespoon dried herbs (Italian blend or your favorite)
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Place asparagus on a baking sheet. Drizzle with 1 tablespoon olive oil, salt, and pepper. Toss to coat.
- In a bowl, mix lemon zest, lemon juice, remaining olive oil, dried herbs, salt, and pepper.
- Place chicken breasts in a baking dish. Pour lemon herb mixture over chicken.
- Roast asparagus for 12 minutes. Add the chicken to the oven and cook for 20-25 minutes, or until chicken is cooked through and asparagus is tender.
- Serve immediately.
Notes
- For extra flavor, add a clove of minced garlic to the lemon herb mixture.
- You can substitute asparagus with broccoli or green beans.
