Description

Ingredients

  • 1 medium pumpkin
  • 2 cups cooked quinoa
  • 1 cup chopped spinach
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers
  • 1/4 cup olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut the top off the pumpkin and scoop out the seeds.
  3. In a bowl, mix quinoa, spinach, onions, bell peppers, olive oil, salt, pepper, and paprika.
  4. Stuff the pumpkin with the mixture.
  5. Place the pumpkin on a baking tray and bake for 45 minutes.
  6. Remove from oven and let it cool for 5 minutes before serving.
