Ingredients
- 1 medium pumpkin
- 2 cups cooked quinoa
- 1 cup chopped spinach
- 1/2 cup diced onions
- 1/2 cup diced bell peppers
- 1/4 cup olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
Instructions
- Preheat oven to 375°F (190°C).
- Cut the top off the pumpkin and scoop out the seeds.
- In a bowl, mix quinoa, spinach, onions, bell peppers, olive oil, salt, pepper, and paprika.
- Stuff the pumpkin with the mixture.
- Place the pumpkin on a baking tray and bake for 45 minutes.
- Remove from oven and let it cool for 5 minutes before serving.
Notes
- Use a firm pumpkin for best results.
- You can substitute quinoa with brown rice.
- Add nuts or seeds for extra crunch.
