Description

A warm and filling lentil soup perfect for chilly evenings.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 cup brown or green lentils, rinsed
  • 6 cups vegetable broth
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery; cook until softened, about 5-7 minutes.
  3. Stir in garlic, cumin, turmeric, and red pepper flakes (if using); cook for 1 minute.
  4. Add lentils, vegetable broth, and bay leaf.
  5. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until lentils are tender.
  6. Remove bay leaf. Season with salt and pepper.
  7. Serve hot, garnished with fresh parsley.

Notes

  • For a creamier soup, blend a portion of the soup before serving.
  • Add a squeeze of lemon juice for extra flavor.
