Hearty Shepherd’s Pie

Description

A comforting dish with a savory meat base and a fluffy mashed potato topping.


Ingredients

  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 lb ground lamb or beef
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 cup beef broth
  • 1 cup frozen peas
  • Salt and pepper to taste
  • 3 lbs potatoes, peeled and quartered
  • 1/2 cup milk
  • 2 tbsp butter


Instructions

  1. Heat olive oil in a large skillet. Add onion, carrots, and celery; cook until softened.
  2. Add ground meat; cook until browned. Drain any excess fat.
  3. Stir in thyme, rosemary, and beef broth. Simmer for 15 minutes.
  4. Stir in peas and season with salt and pepper.
  5. Boil potatoes until tender. Drain and mash with milk and butter.
  6. Spoon meat mixture into a baking dish. Top with mashed potatoes.
  7. Bake at 375°F (190°C) for 20-25 minutes, or until golden brown.

Notes

  • You can add a layer of cheese on top of the meat mixture before adding the potatoes.
  • For a vegetarian option, use lentils or a mix of vegetables instead of meat.
