A hearty and flavorful dish featuring pumpkin stuffed with a mix of fresh herbs and seasonings.
Ingredients
- 1 medium pumpkin
- 2 tbsp olive oil
- 1 cup fresh parsley, chopped
- 1/2 cup fresh cilantro, chopped
- 1/4 cup fresh thyme leaves
- 3 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup grated Parmesan cheese
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the top off the pumpkin and remove the seeds and pulp.
- In a bowl, mix the olive oil, parsley, cilantro, thyme, garlic, salt, and pepper.
- Stuff the herb mixture into the pumpkin.
- Sprinkle Parmesan cheese on top.
- Place the pumpkin on a baking sheet and bake for 45 minutes or until tender.
- Remove from the oven and let it cool slightly before serving.

- Use a sugar pumpkin for the best flavor.
