Description
A quick and flavorful herbed couscous pilaf with sweet dried cranberries. Perfect as a side dish or light meal.
Ingredients
- 1 cup couscous
- 1 1/4 cups vegetable broth
- 1/4 cup dried cranberries
- 2 tbsp olive oil
- 1/4 cup chopped fresh parsley
- 2 tbsp chopped fresh mint
- 2 tbsp lemon juice
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 cup sliced almonds, toasted
Instructions
- Heat the vegetable broth in a saucepan until boiling.
- Place couscous and cranberries in a bowl. Pour the hot broth over them, cover, and let sit for 5 minutes.
- Fluff the couscous with a fork.
- Stir in olive oil, parsley, mint, lemon juice, salt, and pepper.
- Top with toasted almonds before serving.
Notes
- Use whole wheat couscous for extra fiber.
- Substitute vegetable broth with water if needed.
- Add roasted vegetables for a heartier dish.
