Description

A moist and flavorful cake with the subtle sweetness of honey and the richness of olive oil.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar
  • 1/2 cup honey
  • 3 large eggs
  • 3/4 cup extra virgin olive oil
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, cream together the sugar and honey.
  4. Beat in the eggs one at a time, then whisk in the olive oil, milk, and vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Stir in the lemon zest.
  7. Pour the batter into the prepared pan.
  8. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.

Notes

  • You can substitute the milk with buttermilk for a tangier flavor.
