Description
A simple soup to help support your immune system.
Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, peeled and grated
- 1 pound carrots, peeled and chopped
- 4 cups vegetable broth
- Salt and pepper to taste
- Optional: fresh cilantro for garnish
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and cook until softened, about 5 minutes.
- Add garlic and ginger; cook for 1 minute.
- Add carrots and vegetable broth.
- Bring to a boil, then reduce heat and simmer until carrots are tender, about 20 minutes.
- Season with salt and pepper.
- Blend the soup until smooth.
- Serve hot, garnished with cilantro if desired.
Notes
- Adjust the amount of ginger to your taste.
- You can add a pinch of turmeric for extra benefits.
