Description

A simple soup to help support your immune system.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, peeled and grated
  • 1 pound carrots, peeled and chopped
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Optional: fresh cilantro for garnish


Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and cook until softened, about 5 minutes.
  3. Add garlic and ginger; cook for 1 minute.
  4. Add carrots and vegetable broth.
  5. Bring to a boil, then reduce heat and simmer until carrots are tender, about 20 minutes.
  6. Season with salt and pepper.
  7. Blend the soup until smooth.
  8. Serve hot, garnished with cilantro if desired.

Notes
