Instant Pot Lemon Chicken

Description

Make delicious lemon chicken quickly in your Instant Pot.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 lemon, zested and juiced
  • 1 cup chicken broth
  • 2 cloves garlic, minced
  • 1 tbsp dried oregano
  • Salt and pepper to taste


Instructions

  1. Season chicken with salt and pepper.
  2. Turn Instant Pot to Sauté mode. Add olive oil.
  3. Sear chicken for 2-3 minutes per side.
  4. Add lemon zest, lemon juice, chicken broth, garlic, and oregano.
  5. Place chicken in the Instant Pot.
  6. Cook on High pressure for 8 minutes.
  7. Allow natural pressure release for 5 minutes, then quick release any remaining pressure.
  8. Shred chicken and serve.

  • Serve with rice or vegetables.
