Irish Shepherd’s Pie with Mashed Potatoes

Description

A hearty dish of ground lamb and vegetables, topped with creamy mashed potatoes.


Ingredients

  • 1 tbsp olive oil
  • 1 lb ground lamb
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1 cup beef broth
  • 1/2 cup frozen peas
  • Salt and pepper to taste
  • For the mashed potatoes: 2 lbs potatoes, peeled and quartered
  • 1/2 cup milk
  • 2 tbsp butter
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium-high heat. Add ground lamb and cook until browned, breaking it up with a spoon.
  3. Add onion, carrots, and celery to the skillet. Cook until softened, about 5-7 minutes.
  4. Stir in garlic, thyme, and rosemary. Cook for 1 minute.
  5. Pour in beef broth and bring to a simmer. Season with salt and pepper.
  6. Stir in frozen peas.
  7. Transfer the lamb mixture to a baking dish.
  8. For the mashed potatoes: Boil potatoes in salted water until tender, about 15-20 minutes. Drain.
  9. Mash potatoes. Add milk and butter. Season with salt and pepper.
  10. Top the lamb mixture with mashed potatoes.
  11. Bake for 20-25 minutes, or until the potatoes are golden brown.

Notes

  • You can substitute ground beef for lamb.
  • Add a splash of Worcestershire sauce for extra flavor.
