Description
A hearty dish of ground lamb and vegetables, topped with creamy mashed potatoes.
Ingredients
- 1 tbsp olive oil
- 1 lb ground lamb
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1/2 tsp dried rosemary
- 1 cup beef broth
- 1/2 cup frozen peas
- Salt and pepper to taste
- For the mashed potatoes: 2 lbs potatoes, peeled and quartered
- 1/2 cup milk
- 2 tbsp butter
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium-high heat. Add ground lamb and cook until browned, breaking it up with a spoon.
- Add onion, carrots, and celery to the skillet. Cook until softened, about 5-7 minutes.
- Stir in garlic, thyme, and rosemary. Cook for 1 minute.
- Pour in beef broth and bring to a simmer. Season with salt and pepper.
- Stir in frozen peas.
- Transfer the lamb mixture to a baking dish.
- For the mashed potatoes: Boil potatoes in salted water until tender, about 15-20 minutes. Drain.
- Mash potatoes. Add milk and butter. Season with salt and pepper.
- Top the lamb mixture with mashed potatoes.
- Bake for 20-25 minutes, or until the potatoes are golden brown.
Notes
- You can substitute ground beef for lamb.
- Add a splash of Worcestershire sauce for extra flavor.
