Description

A simple Italian soup with vegetables and bread.


Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 1 (28 ounce) can crushed tomatoes
  • 6 cups vegetable broth
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 4 slices crusty bread, toasted
  • Fresh parsley, chopped, for garnish


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, carrot, and celery. Cook until softened, about 5-7 minutes.
  3. Stir in crushed tomatoes, vegetable broth, oregano, and red pepper flakes. Season with salt and pepper.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Place a slice of toasted bread in each bowl.
  6. Ladle soup over bread.
  7. Garnish with fresh parsley.

Notes

  • You can add other vegetables like zucchini or spinach.
  • For a thicker soup, mash some of the vegetables.
