Description
A simple Italian soup with vegetables and bread.
Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, chopped
- 1 celery stalk, chopped
- 1 (28 ounce) can crushed tomatoes
- 6 cups vegetable broth
- 1/2 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes
- Salt and pepper to taste
- 4 slices crusty bread, toasted
- Fresh parsley, chopped, for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, carrot, and celery. Cook until softened, about 5-7 minutes.
- Stir in crushed tomatoes, vegetable broth, oregano, and red pepper flakes. Season with salt and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Place a slice of toasted bread in each bowl.
- Ladle soup over bread.
- Garnish with fresh parsley.
Notes
- You can add other vegetables like zucchini or spinach.
- For a thicker soup, mash some of the vegetables.
